Here is what happened in the Farm this week:
The biggest news is that Lexi is almost potty trained! I decided on Monday that I would quit putting it off and I went for it. She immediately got the whole "going in the potty" thing, but still does not yet have down the whole "tell Mom when I need to go" thing. So basically she prances around the house in her big girl undies and I put her on the toilet every now and then. Today I started to put a diaper on her for her nap and she protested. Three hours later and she was still dry!
I have continued to make bread and bagels like a crazy person. Some have been better than others, and it doesn't help that I don't have an oven thermometer or that great of an ability to follow a recipe exactly as it is written. But my special order of 25 pounds of organic 6 grain flour arrived! (I have a friend who also loves to bake bread and orders from a co-op, so she let me in on their great deals!)
I also got 5 pounds of quinoa from the co-op to use in my quest of eating less meat. Tonight's quinoa dinner got an A from Sasha and I, and not so great marks from Nate and Lexi. Ah well, there are lots of different ways to make quinoa and I will be trying them.
We bought a second freezer. It came today and will soon be filled with lots of good stuff, including a 1/4 of a grass-fed cow!
Seems like this is a very food-focused post, but Nate and I went to a great restaurant last night. We had a groupon for Beans and Cornbread and had some delicious southern food. Also a good experience for us, since we were the only white people there for most of our meal. Although we live in a diverse community, it isn't that common for Nate and I to stand out quite as much as we did last night. A good thing for everyone to do once in a while, especially for a transracial family. It gives us a glimpse of what life is like for transracial adoptees.
And I think that about wraps it up...another week gone in this quickly fading summer. I know I am the minority in this, at least among my friends, but I can't wait for school to start!
First of all, totally jealous about the ease of your potty training (but super happy for you and Lexi!). Second of all, I am wanting to do the whole cow thing too! Should be easy in our rural community. I, too, need that extra deep freezer first though. Curious to see how you like it! And finally - I am also excited for school to start (minus the early mornings!). Josiah loves other kids so much and is getting very bored with me as his main playmate! LOL.

Amber! I have been thinking about you...you seemed to have disappeared from blog world! We got our freezer from Lowe's, with a 10% coupon. And if only you were closer, I think Josiah and Sasha would be a good match in energy level. They could wear each other out while we watched!

I am soo jealous about your cow!!! I really want to look into that. I've also been looking into buying a share of a cow so that we can get raw milk, but it seems so pricey, even though I know it's probably totally worth it.
Here is a yummy quinoa recipe we made last night...http://letsdishrecipes.blogspot.com/2011/03/creamy-quinoa-primavera.html
And this is one that we love for breakfast...

I use regular milk and flax meal instead of the wheat germ and almond meal. Then I like to mash up bananas and peanut butter and stir it in (this way you can also opt out of the brown sugar if you want and it still has lots of yummy flavor).
